WHAT I EAT IN A DAY: Smoothie Bowl

This was my first-ever attempt at making a smoothie bowl, but you all loved it so much on Instagram, I knew I had to create a blog post for it. Smoothie bowls are surprisingly easy to make, so much so that I will be making quite a bit of them in the future for breakfast, at least until the weather really starts chilling.

Ingredients:

  • 2 frozen bananas
  • 1/2 cup frozen blueberries
  • a handful of spinach
  • 4 fresh strawberries, cut
  • half a handful of steel-cut oats
  • 2 tbsp cacao nibs
  • 1 tbsp chia seeds
  • coconut water

My family and I recently acquired a Vitamix; so we have been using it for all of our smoothies, ice cream, and dips. It is so powerful and easy to use that I highly recommend it (despite the price tag).

I used the Vitamix for this recipe, throwing the bananas, blueberries, and spinach in the blender. I added a bit of coconut water but only enough to allow for the blender to mix everything thoroughly.

Next, I poured/scooped the mixture into a bowl and sprinkled on the rest of the ingredients.

Voila! It’s really that simple!
